The production of Gaia Oliva Premium Ayvalık olive oil begins with harvesting Ayvalık olives in October and November during the 2021–2022 harvest season in Salihli, Manisa.
To preserve their nutritional value, the olives are pressed as quickly as possible within 2–4 hours after harvest. During the pressing process, the water temperature is kept below 27°C to ensure cold extraction.
Thanks to a high-technology system called MoriTem, the polyphenol values of the oil separated from the fruit are preserved as much as possible during the extraction process. The olive oil, which is extracted in the most efficient way for health benefits, is rested for one night before moving to the filtration stage. Once the sediments are removed, the oil is transferred into tanks for a short resting period.
