Novavera Trilye Early Harvest Extra Virgin Olive Oil

Novavera Trilye (Gemlik) Early Harvest extra virgin olive oil is produced from carefully cultivated Trilye olives grown at 600 meters altitude in our Manisa Salihli olive groves.

The olives are hand-picked with utmost care, transported under cold chain to Novavera facilities in Ayvalık (BRC and ISO 22000 certified), and cold pressed to preserve all their aromatic richness and nutritional qualities.

The maximum free acidity of this extra virgin olive oil is 0.3%, an indicator of quality reflecting the freshness and health of the olives used.

Cold Pressing & Quality

At Novavera, temperature is monitored at six stages throughout the process, from olive to oil. The olive paste is maintained below 22°C, ensuring true cold pressing.

This method preserves the naturally occurring polyphenols in the olives, responsible for antioxidant properties and nutritional benefits.

Tasting Experience

A high-quality olive oil evokes freshness and natural character while providing a pleasant sensory experience.

When tasting and lightly inhaling the oil, you may perceive a gentle peppery sensation in the throat and on the palate. Herbal aromas, balanced bitterness, and characteristic pungency come from polyphenols, indicating a natural antioxidant-rich olive oil.

Flavor Profile

Early Harvest Trilye olive oil features intense aromatic notes of:

  • Fresh grass
  • Artichoke
  • Tomato leaf
  • Arugula
  • Fresh green herbs
